 Simple Hollandaise Sauce Serves 4 Ingredients 1 egg yolk* 1 tbsp. lemon juice 4 tbsp. melted butter Water, as needed 1 tsp. kosher salt Procedure In a blender, combine egg yolk, lemon juice, and salt.  Pulse several times to combine.
