Simple Hollandaise Sauce

 Simple Hollandaise Sauce
Serves 4

Ingredients

1 egg yolk*
1 tbsp. lemon juice
4 tbsp. melted butter
Water, as needed
1 tsp. kosher salt

Procedure

  1. In a blender, combine egg yolk, lemon juice, and salt.  Pulse several times to combine.
  2. While blending, slowly add melted butter.  Whip until frothy and pale yellow.  If necessary, add water 1 tsp. at a time to thin sauce.
